Cauliflower Fried Rice

Ingredients:

1 1/2 Teaspoon Olive Oil

6 Teaspoon Sesame Oil

2 Teaspoon Ground Turmeric

4 Teaspoon Minced Garlic

4 Tablespoon Minced Ginger Root (Raw)

2 Onions (Small)

8 Carrots (Medium)

8 Cups Cauliflower Florets (Finely Chopped or bag of Cauliflower Ready Rice)

2 Cups Peas

5 1/3 cup 100% liquid egg whites

Instructions:

  1. Peel and dice the carrots, mince the onions, and finely chop the cauliflower florets (or use ready cauliflower rice to maintain the same portions).

  2. Heat a large pan over medium heat and add 1/2 teaspoon olive oil.

  3. Add the minced onion, garlic, and ginger to the pan and cook until golden.

  4. Add the cauliflower florets, carrots, peas, sesame oil, ground turmeric, and season with salt and pepper to taste.

  5. Stir the ingredients well, then cover the pan with a lid. Cook until the vegetables are heated through.

  6. Push the vegetables to one side of the pan and add the remaining oil and the liquid egg whites. Allow them to cook, and then stir well to scramble the eggs.

  7. Transfer the stir-fry to a serving plate once the eggs are cooked and combined with the vegetables.

  8. Serve and enjoy your delicious cauliflower stir fry!
