Egg White & Roasted Red Pepper Pitas

Ingredients:
1/2 Tablespoon Olive Oil
1/2 Cup Jarred, Roasted Red Pepper Slices (Drained)
1/4 Teaspoon Salt
1 Cup Liquid Egg Whites
1 (8”) Whole Wheat Pita Bread (Halved)
1/4 Cup Crumbled Feta Cheese
Instructions:
Heat oil in a large skillet over medium heat. Add pepper slices and salt. Saute for 1 minute.
Add egg whites and saute until cooked, about 2-3 minutes.
Spoon half of the egg white mixture into each pita half and top the sandwiches with feta cheese. Serve immediately.
