Egg White & Roasted Red Pepper Pitas

Ingredients:

  • 1/2 Tablespoon Olive Oil

  • 1/2 Cup Jarred, Roasted Red Pepper Slices (Drained)

  • 1/4 Teaspoon Salt

  • 1 Cup Liquid Egg Whites

  • 1 (8”) Whole Wheat Pita Bread (Halved)

  • 1/4 Cup Crumbled Feta Cheese

Instructions:

  1. Heat oil in a large skillet over medium heat. Add pepper slices and salt. Saute for 1 minute.

  2. Add egg whites and saute until cooked, about 2-3 minutes.

  3. Spoon half of the egg white mixture into each pita half and top the sandwiches with feta cheese. Serve immediately.
