Lazy Enchiladas

Ingredients:

  • 1 lbs. lean ground beef (96/4)

  • 1 can (19 oz.) Red Enchilada Sauce

  • 1 can (4.5 oz.) diced green chilies

  • 1 cup (112g) Mexican Cheese, Shredded

  • 4 Super Soft Mission Flour Tortillas

Beef Seasoning:

  • 1 tbsp. ground cumin

  • 1 tsp. smoked paprika

  • 1 tsp. garlic powder

  • 1 tsp. chili powder

  • 2 tbsp. water

Instructions:

  1. Preheat the oven to 375F.

  2. In a pan over medium heat, brown the ground beef and break it into small pieces. In a separate bowl, mix all the beef seasonings together and add water to create a paste.

  3. Once the beef is almost cooked through, stir in the seasoning paste. Mix well to combine.

  4. Add in the green chilies and let it simmer for a few minutes.

  5. Spray a 9 x 13 baking dish with non-stick spray. Spread a thin layer of enchilada sauce at the bottom.

  6. Begin layering: start with 2 tortillas, followed by half of the beef, half of the remaining enchilada sauce, and half of the cheese. Repeat this layering.

  7. Place the dish in the oven and bake for 25 minutes or until bubbly with slightly crispy edges. Cut and serve.

Coach’s Notes:

Spice It Up! Want a bit more kick? Consider adding some diced jalapeños or a pinch of red pepper flakes to the beef mixture.

Cheesy Delight! For a more decadent treat, sprinkle some feta or queso fresco on top before serving.
