Pork & Vegetable Spring Rolls

Ingredients:

Salad Mixture:

  • 2 Cups Romaine Lettuce, Thinly Sliced

  • 1 1/2 Cups Cooked Pork, Cubed

  • 1 Cup Fresh Spinach, Thinly Sliced

  • 3/4 Cup Carrots, Julienned

  • 1/3 Cup Celery, Thinly Sliced

  • 1/3 Cup Dried Cherries, Coarsely Chopped

  • 1 tbsp Sesame Oil

Wrapping and Garnish:

  • 12 Round Rice Paper Wrappers (8 inches)

  • 1/4 Cup Almonds, Sliced

  • 1/4 Cup Wasabi-coated Green Peas

Instructions:

Prepare Salad Mixture:

  1. In a large bowl, combine romaine lettuce, cooked pork, spinach, carrots, celery, and dried cherries.

  2. Drizzle with sesame oil and toss until all ingredients are well-coated.

Assemble Rice Paper Rolls:

  1. Fill a large, shallow dish with warm water. Dip one rice paper wrapper into the water just until it becomes pliable, about 45 seconds. Be careful not to oversoften.

  2. Lay the wrapper flat on a clean surface. On the bottom third of the wrapper, place a portion of the salad mixture. Sprinkle a few sliced almonds and some wasabi-coated green peas on top.

  3. Fold in the sides of the wrapper and then roll it up tightly, starting from the bottom, to encase the filling completely. Place the roll seam side down on a serving plate.

  4. Repeat the process with the remaining wrappers and filling.

Serve:

  • Enjoy fresh with your choice of dressing or dipping sauce.
