Mediterranean Shrimp Penne

Ingredients:

12oz Whole-Grain Penne

2 Tablespoons Olive Oil

1/4 Cup Chopped Red Onion

1 Tablespoon Chopped Garlic

1/4 Cup White Wine

2 (14.5oz) Cans Diced Tomatoes

1lb Large Shrimp (Peeling & Deveined)

1/2 Cup Grated Parmesan Cheese

Instructions:

  1. Fill a large pot with water and bring to a boil over high heat. Add pasta and cook for 13 minutes. Drain and keep warm.

  2. Heat oil in a medium, nonstick skillet over medium-high heat. Add onion and garlic. Saute about5 minutes or until tender.

  3. Add wine and tomatoes and cook 10 more minutes, stirring frequently. Add shrimp to sauce and cook an additional 5 minutes.

  4. Toss shrimp with pasta and serve with Parmesan sprinkled on top.
