Ingredients:

  • 8 medium red potatoes, quartered

  • 3 garlic cloves, peeled

  • 2 tablespoons butter

  • 1/2 cup fat-free milk, warmed

  • 1/2 teaspoon salt

  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Combine the quartered potatoes and peeled garlic cloves in a large saucepan. Fill with enough water to cover the potatoes and garlic.

  2. Bring the water to a boil over high heat, then reduce the heat to low. Cover the saucepan and let it simmer for 15-20 minutes, or until the potatoes are very tender.

  3. Drain the potatoes and garlic thoroughly and return them to the pan. Add the butter, warmed milk, and salt. Mash the mixture until smooth and creamy.

  4. Stir in the grated Parmesan cheese until well combined and serve hot.
