Mixed-Berry Protein Muffins

Ingredients:

  • 1 Medium Banana (Peeled & Mashed)

  • 2 Large Eggs

  • 1/4 Cup Maple Syrup

  • 1/2 Cup Unsweetened Almond Milk

  • 1 Tablespoon Melted Coconut Oil

  • 2 1/2 Cups Quick-Cooking Oats

  • 1/4 Cup Vanilla Protein Powder

  • 1 Teaspoon Ground Cinnamon

  • 1 Teaspoon Baking Powder

  • 1/4 Teaspoon Salt

  • 1 1/2 Cups Frozen Mixed Berries (Thawed)

Instructions:

  1. Preheat oven to 350F. Spray a twelve-cup muffin tin with non-stick cooking spray.

  2. In a large bowl, combine banana, eggs, maple syrup, almond milk, and coconut oil. Mix well.

  3. Add oats, protein powder, cinnamon, baking powder, ad salt to the bowl. Stir until will combined.

  4. Carefully fold in berries. Spoon batter into the prepared muffin tin and bake for 18-20 minutes.

  5. Cool muffins in the tin for 5 minutes, then turn muffins out onto a wire rack and cool completely before serving.
